chicken poblano pepper fajitas

This delicious chicken fajita recipe was adapted from here . She did a cooking segment on snapchat of them and I wanted to try them! (She does those weekly her username is : Whatsgabycookin) This past week on snapchat if you follow me, you've seen me doing short little cooking segments too (flank steak over zucchini noodles, flatbread barbecue chicken pizza, and heirloom tomato salad). 

I loved the addition of the poblano pepper in this recipe and her marinade is delicious! We marinated the chicken overnight for extra flavor.

All you need is : poblano pepper, red bell pepper, yellow pepper, red and yellow onion, lime juice, olive oil, garlic, salt, cumin, chili powder, red pepper flakes, chicken breast, and +/- avocado!

We served it over salad both nights (leftovers were amazing) and added avocado on top. Jake liked using Kraft's southwest ranch over top on his salad, and I used a little salsa. Gaby on snapchat just ate it out of a bowl. It's an easy and tasty low-carb dish.
